Just like others (I hope) take the whole mother plant out, and figure out the one you want to propagate… then detach that pup and it’s roots from the mother plant… CAREFULLY! Then, put it in water and wait for the roots t on heal and form… then you can put it in soil!

Am I able to propagate using just the long pieces that are reaching out maybe just snipping the small rosette off the end of the stem?

Just chop off the stem, let is callous and put it in well draining soil. Keep it away from extreme heat or direct sunlight until it roots. But it does need lots of indirect light. You can propagate the leaves on the leggy stems, but you might not have much luck since they are so small. Also, I would let them get a bit bigger while still attached to the mother plant before propagating.
