My mum got me this Lemon tree a while back. It’s been doing decently well but I haven’t needed to water it in at least two weeks. It along with some of my other plants soil stays damp and doesn’t dry out, it started to get a little mold growing on it. I’m new to this and I don’t know what I’m doing wrong, can anyone help?

Lemon trees and other citrus fruits tend to live in tropical places that have two seasons in terms of climate: rainy and dry. If it's using less water recently, it may be starting its winter rest period where it expects dry conditions. As for general overwatering prevention: use pots that fit the root ball. If they're too big, the extra dirt on the sides and bottom don't dry out and can cause problems. Use appropriate soil for each plant (cactus soil for cacti, bark for orchids, etc.) It also helps to put a little bit of higher drainage soil at the bottom when you pot things, just to keep the very tips of roots dryer. Never let roots sit in stagnant water. When watering, be thorough, but make sure it drains well afterwards. Since you mentioned mold, you may want to treat with a fungicide. Also look up flowerpot parasol, since that's a harmless fungus that looks similar
