Does anyone know why my banana croton look this way? I've given it water, changed the soil, and it has been getting sun.

I’m thinking it’s likely due to low humidity and needing more frequent waterings. These guys are thirstyyy from my experience. I wouldn’t let the soil dry completely out between waterings. They like some direct sun as well :)

Definitely water more often and increase light; most croton varieties should show red and yellow coloration that fades to green if they aren't getting enough light. To help rehydrate it, give it a long bottom watering soak (like 1 to 24 hours; it's that thirsty.) Make sure everything drains properly after the soak. Since it needs frequent watering, watch for and take precaustions against root rot
