These roots aren’t squishy but they don’t seem healthy to me….underwatering or something else?

    You noted the roots are not squishy which makes overwatering less likely. If the leaves were that curled before you took it out of the soil I’d say under watering is likely the problem for both the roots and the leaves. If the leaves have gotten a little worse or a lot worse since removing the soil I’d say it’s both transplant shock and under watering.
