Harvesting Leeks
Leeks are harvested for their long, tender white stems. They can be picked once they reach usable size and may be left in the ground for extended harvest in cool weather.

Care instructions
Harvest at the right size.
Leeks are ready to harvest when the stem reaches about 1–2 inches (2.5–5 cm) in diameter. Younger leeks are more tender, while larger ones have stronger flavor.Loosen the soil first.
Use a garden fork to gently loosen soil around the base before pulling. Leeks have deep roots and can break if pulled without loosening.Pull carefully from the base.
Grasp the leek low on the stem and pull straight up once the soil is loosened.Harvest during cool weather if possible.
Leeks tolerate cold well and can remain in the ground into fall or winter in mild climates.Don’t wait too long.
Overmature leeks may become tougher or develop flower stalks in warm conditions.Trim after harvesting.
Cut off roots and trim dark green leaf tops as desired. Rinse thoroughly, as soil often collects between layers.Store properly after harvesting.
Store unwashed leeks in the refrigerator. Use within 1–2 weeks for best quality.
