Harvesting Eggplant
Eggplant is best harvested while the fruit is glossy, firm, and fully developed. Picking at the right time ensures tender flesh and encourages the plant to keep producing.

Care instructions
Harvest at the right stage.
Eggplants are ready to harvest when they reach their expected size for the variety and have smooth, shiny skin. Overripe eggplants turn dull and develop tough, bitter flesh.Check firmness.
Gently press the skin with your thumb. If it springs back, the eggplant is ready. If the indentation remains, the fruit is overripe.Harvest during cooler hours.
Pick eggplants in the early morning or early evening to reduce stress on the plant and keep the fruit firm.Use pruners or a knife.
Eggplant stems are tough. Cut the stem cleanly with sharp pruners or a knife, leaving a short piece attached. Do not pull the fruit off by hand.Handle carefully.
Although firm, eggplants can bruise easily. Place them gently in a shallow container and avoid stacking.Harvest regularly.
Removing ripe eggplants encourages the plant to flower and produce more fruit throughout the season.Store properly after harvesting.
Store eggplants in the refrigerator and use within a week for best texture and flavor.
