Harvesting Beets
Beets can be harvested at several stages, from small and tender to fully mature roots. Picking them at the right time ensures the best flavor, texture, and color.

Care instructions
Harvest at the right size.
Beets are ready to harvest when the root is about 3–7 cm in diameter. Smaller beets are sweeter and more tender, while larger ones develop a firmer texture and earthier flavor.Check the shoulders.
The top of the beet root is usually visible at the soil surface. Full color at the shoulders is a good indicator that the beet is ready to harvest.Harvest during cooler hours.
Pick beets early in the morning or evening to maintain crispness and reduce stress on the plant.Loosen soil if needed.
In compacted soil, gently loosen around the root with a garden fork before pulling to avoid breaking or tearing.Pull gently by the tops.
Hold the beet greens close to the base and pull straight up. Avoid twisting, which can damage the root.Separate greens from roots.
Cut off the leaves, leaving about 2–3 cm of stem attached to prevent bleeding. Beet greens are edible and can be used separately.Store properly after harvesting.
Brush off excess soil and store beets in the refrigerator. Keep roots and greens stored separately for best freshness.
