Harvesting Asparagus
Asparagus is a perennial vegetable harvested in spring. Proper timing is important, especially in the first years, to ensure healthy plants and long-term production.

Care instructions
Do not harvest in the first year.
Allow newly planted asparagus crowns to establish fully. Begin light harvesting in the second year, and full harvesting from the third year onward.Harvest at the right height.
Cut spears when they are about 15–20 cm tall and still firm with tightly closed tips. Overgrown spears become woody and tough.Harvest frequently.
Check plants daily during peak season. Spears can grow several centimeters per day in warm weather.Cut cleanly at soil level.
Use a sharp knife to cut spears just at or slightly below the soil surface. Avoid damaging nearby emerging spears.Stop harvesting at the right time.
After 4–6 weeks of harvesting (depending on plant age), allow remaining spears to grow into fern-like foliage. This helps the plant store energy for next year.Handle gently.
Fresh asparagus bruises easily. Place spears carefully in a container and keep them cool.Store properly after harvesting.
Store upright in the refrigerator with the ends in a small amount of water, or wrap in a damp paper towel. Use within a few days for best quality.
