So I have my bell peppers in a pot and this just sprouted up from it. Any idea on what it is and what I need to do?

    Looks like a mushroom to me. It means you’ve got good soil! Usually you can just leave them, they won’t hurt the plant

    Yes, mushroom. And yes there is a good amount of organic matter in your soil.
