Can I take off the lower leaves to put this further down in the soil and straighten out it's growth?

yes. you can also propagate those leaves into new plants by putting them in soil and misting regularly

I hadn't considered propagating. It's my daughter-in-law's plant so I'll let her know she can do that. I may take one for myself though. 😁

It’s reaching for the light .. is the grow light strong enough ?

I think it's strong enough but these aren't my favorite grow lights or the best ones I have. I moved it under one of the best ones after I took off some of the lower leaves to help it along and to get it to grow straight. It looks much better and hopefully will grow straight. I realized just now that I didn't take new pictures after this recent pruning. I'll have to do that.

I added new pictures of him. I added the page to my original post so you can see the recent photos. He has a bit to go to level out the leaves but he'll get there as I rotate him. When my daughter-in-law takes him back to work, he may etiolate.
