What do I do with this lady? Chop up the giant growth and pot that, or just go on letting her live her best life?

Either leave it there if you like it that way, or pop off all the leaves and you can get tons of new babies like that!

I agree with Charlie! Sedum loves to travel so it’s never going to stay compact like echeveria. So do either😊
