I swear by Espoma’s Organic Cactus and Succulent mix for all of mine. PLEASE avoid Miracle Grow’s cactus mix, or soil in general, especially if you live in a more humid climate in the warmer months. It just isn’t well-draining enough. As for plants I’d recommend for beginners, I adore jades. Some others I’ve enjoyed from my collection are sedum morganianum, holiday cactus/schlumbergera truncata, kleinia petraea, bear paw cactus/cotyledon tomentosa, faucaria tigrina, haworthia, aloe ‘Minnie Belle’ and tiger tooth aloe/aloe zanzibarica, and I’ve noticed quite a rise in elephant bush as an alternative for those into bonsai that want a low-maintenance choice. I’d like to increase my echeveria collection one day, but my current favorites from my collection are echeveria parva and echeveria Lola. And as for a succulent-adjacent option, peperomia obtusifolia and clusiifolia. Their leaves are succulent in nature, they do great in cactus and succulent mix, and I treat them like a jade, practically. There’s lots of different types of peperomias, even only out of the obtusifolia and clusiifolia varieties.

I recommend doing a mixed species pack of cactus seeds. They're absolutely adorable as baby sprouts. They'll survive or not based on your natural care tendencies, so it's a good way to figure out which species will be a good match for you going forward

I second that Miracle Gro soil comment. I live in zone 9 and I have to add perlite to all of my soil mixes and even that sometimes isn’t enough!

An easy plant would be pediocactus simpsonii! Really easy to take care of and very hardy!

A fun easy plant are Hen and chick succlents! They reproduce pretty quickly in summer and mine live outside and I do absolutely nothing to then and they look great. My cats even mess with them and they still survive. I've learned there's not much they won't survive 😉
