Should I go ahead and cut her old flower off now ? Or does she still need time ( this will be my first time pruning šŸ˜­šŸ«¶šŸ¾)

    I would leave it until it falls off by itself. Flowering is an important part of plantsā€™ hormonal cycle. Cutting it will not disrupt this cycle and they won't "know" the flower isn't there, so they'll try to pull nutrients from it, without realizing it's gone.

    Yes trim it back down at the base of the stalk.
