What is the technical term for wandering Jew plants? I have a lot of them and the app identifier are calling it a boat lily, but it doesn’t look quite right.

Tradescantia zebrina is the scientific name for a Wandering Jew. Tradescantia spathacea is Moses-in-the-cradle, also know as a Boatlily. There's are several other Tradescantia species too

There are hundreds of species of transcantia. The version u have is commonly called Moses in the cradle. Wandering Jew is much more leggy with wider leaves where u have more of a columnar form with very long leaves.
