Does anyone know what garlic scapes are and where they are on garlic plants? Apparently, you’re supposed to cut them off, but I don’t know how far down to cut them. Please help!

From what I’ve learned garlic scapes are the tender, edible shoot that develops on hardneck garlic plants. It's essentially the flower stem that, if left on the plant, would develop into a flower and then seeds. Scapes look like long, curly, green shoots, resembling green onions or scallions, but thicker. Scapes are typically harvested when they are beginning to curl.
