   Cut stalks at the base. You still have green there. I would remove the moss, and use orchid bark after it’s done flowering. What do the roots look like?

   You can cut the flower stalks above an unused node to encourage it to reuse the flower stalks (the cut must be on a green section; the dry brown parts of the stalks are dead and won't rebloom.) Here is a pic of what a node looks like:

     Next repot. It can help to soak the roots first (like 20 minutes, just the roots in water) to make them flexible. Then assess their health and trim away any dead ones. (Dead roots are either super dry and crispy or squishy. If you pull on them, the outer part comes off and reveals a stiff stringy inner part. Healthy roots are firm. Once you've trimmed the roots, pot it back up. Use a pot with good drainage, and use orchid bark. Here's a picture to help with the roots:

     Once it's potted, continue regular care. When watering, use room-temperature water (no ice cubes!) And get water directly on the roots. Avoid getting water where the leaves meet (that spot is called the "crown", and water can get trapped there and cause rot. If you splash it, dry it up.) In most places, this type of orchid likes to ne watered about once a week, but adjust as needed. (Yours looks a bit dehydrated; see how the leaves are wrinkled? That's caused by long-term underwatering.) For light, it wants more; the leaves should be a bright apple green when it's getting the right amount. It also looks like you have two orchids in there. For monitoring health, pay more attention to new leaves; some signs of issues (like the dehydration wrinkles) scar older leaves and will stay until they age out
