My mother in law “watered” it 2 days ago, but she did it from the bottom in a dish(not my style) and when I came back from my small getaway and checked on it, this Chinese Evergreen (Chyna), now looks like this. Will she be alright?

The dang mother in laws!! Does it need more water? Looks like the bottom leaf needs to be chopped anyway?

Bottom watering isn't bad. But it will depend on how long she left it in the bowl, and how far down the roots are. If she means she just put water in the saucer... it probably got barely any water.

When I came back. It was still sitting in a huge bowl of water and the bottom felt super soaked. I’m sure it’s not bad, I just don’t water Chyna like that so maybe it was too much for her?

Based on your description here and the photos you shared, it definitely seems like she got overwatered. Not great that she sat in a huge bowl of water for a couple of days since that could cause root rot, so if she doesn't improve after she dries out and gets back to her normal schedule, check the roots, but I think she'll bounce back!

Should I have her sit out in the sun today to dry her up or not a good idea?

+1 for probably overwatered. I would just stop watering until you’re sure it’s dried out. Just keep telling Planta you watered it, but don’t. Once the soil dries out she’ll perk up. If she doesn’t recover in a week or so, you can go into save mode and repot her in new dry soil.

I’d repot stat in dry soil and soak the roots in a hydrogen peroxide water solution for about ten minutes before putting into the new soil

in my experience, a plant that’s been overwatered once doesn’t automatically mean root rot. i would let her dry out for a while, and if she doesn’t improve by the next time you would normally water her, then pull her out and take a look at the roots. she was probably a little shocked too by the different watering style. but i think she’ll bounce back! she looks healthy
