What’s happening here? I just planted my new monstera that I’ve had in water so the roots can grow. Any advice?

it is a major root shock to the plants when moving from water to soil. the soil must be kept moist at all times, but not water logged, so the roots can acclimate to the soil

Okay thank you! Will the leaf die off or can it be saved?

most likely die off. you can cut some of the stem but only above the node, so a new stem can grow from there. cutting that leaf will encourage new growth.
