As you can see, my pink princess is having trouble being and staying pink. Most of her leaves are green and her one pink leaf is yellow. What am I doing wrong and how do I fix this?

What kind of lighting does it have? With some types of variegation it could need more or less light depending

It’s in our sun room… Soo almost full sun or indirect

Nothing you will probably get more pink leaves higher at the top of plant. Make sure it gets bright indirect light, you could use a humidifier and grow light. I also figured out when I cut my prissy at the bottom of a damaged green leaf it started to push out more pink variegated leaves.

I also would suggest a moss pole and dust your leaves off it helps with photosynthesis

A pole for it to grow on will help, but it might be time to prune damaged, old, or floppy leaves. They push out new leaves everytime you prune older ones

I don’t know if you can tell from the picture, but some of the leaves have stopped growing halfway… should I cut those?

I would, but you shouldn't prune more than 25% of the leaves. You can always cut more off later
