My ficus Audrey has lost lots of leaves and grown really tall!! Is it possible to cut the stem and propagate with water to replant and maybe it will grow fuller?

I think it’s growing tall and dropping leaves from insufficient light. So, only propagating won’t make it fuller. The spider plant looks like it needs more light, as well, especially if there are supposed to be white stripe in the middle of the leaves. It may be a second indication that area is not getting enough intense light or the light doesn’t last long enough each day. I recommend adding grow lights to that area. You can still propagate the plant. Leave at least 6 inches of stem on the potted plant to grow new leaves. 🍀🪴

So would I just cut it and soak in water and then repot when there are roots?

If you chop off the apical, it should start growing fuller at the node below. You can also look up wounding and keikei paste. It's to promote more leaf growth at lower nodes.
