What’s wrong with my plant? I’ve had this Joshua plant for a little over a year now, I’ve struggled with preventing the fuzzy off-white fungus which seems to be growing on its leaves, and now it’s gotten quite sad with many leaves turning yellow/brown and spotting. There does seem to be quite a bit of new growth as well though too. Every time I water it, it seems to get upset, so I’ve hardly been watering it (going like 2 months without watering). When I was watering it more regularly it was not any better, and the leaf fungus was worse. Not sure how to best go about caring for this plant.

Have you been treating with an Antifungal?

I have not, I’ve been wiping it away and it only seems to be appearing on select few new growth leaves

I would treat with an Antifungal. Just wiping won't make a fungus go away, and then can infect the leaves eventually causing yellowing and browning.

I use Bonide copper spray on my houseplants and garden plants and it seems to control all fungus really well including powdery mildew. I think that’s what your white powdery looking fungus is.
