My Jacklyn isn’t doing too well and is constantly getting spider mites. Should I chop it down? Would it grow back?

I use insecticidal soap and I wash it, treat it with that spray a good spray down every 2 weeks and you should be fine. Make sure it gets good light and I keep it by the humidifier and she’ll come back. She’s also a very thirsty girl so keep her hydrated regularly

I am not sure how mites respond to insecticidal soap but I would choose a miticide instead. Alocasia prefer bright indirect light, higher humidity, and soil that drains well yet holds moisture around the roots. A good quality potting soil with a little extra perlite or orchid mix should do the trick.
