Were those the oldest leaves and has anything significant changed in her environment?

No even newer leaves were yellowing, I moved her back into the living room recently which is really shaded but once I noticed the yellowing I put her back in my bedroom with the grow light.

I haven’t watered her because usually the yellowing happens when I overwater and I don’t want her to drown

That sounds like a solid plan. Unfortunately I think you might have to wait a day or two and see if anything else needs adjusting

Looking at that pot, doesn’t look like it has drainage holes, you say it goes yellow when watering, could be the water type your using or because of no drainage , they like lots of light, so shady areas will restrict there growth, in one of you pictures lt looks like spider mite web, and the chowed parts on the leaf veins, so check back of leaves, use your phone camera and zoom in, normally clear ish with dark spot on 2 sides. If you do change to a pot with drainage be best to add in some better drainage components like perlite, pumice, a bit of activated charcoal will help roots. The only other thing is have you been feeding it fertilizer feed.

hey! so this is completely anecdotal and not based on anything i’ve researched, but i’ll share anyway. i was also having trouble keeping my elephant ear happy. his leaves were turning yellow and dropping much quicker than new ones were opening. when he got down to his last good leaf, i decided to prune the dead leafs off, and i was very surprised because he quickly started sprouting a new leaf from one of the yellow arms. the photo of the two dead leafs was taken almost 3 weeks ago, and i just took the photos of the new, green leaf today. it’s very interesting cause this leaf is misshapen compared to the other ones, but yeah he got right to work opening it up as soon as i pruned the dead ones off! it’s almost like it was forming underneath the old leaf and needed to be let out or something. again, this is completely anecdotal but i thought it was very interesting to witness.
