All white leaves are possible from variegated plants, but not that helpful for photosynthesis. Any leaves at all is great for a rehab plant, but if it shows absolutely no green (not even a mint type variegation that's very light green or a super light pink) then it might be better to cut it so the plant can focus its energy on making more productive leaves. For a healthy plant, white leaves are showy and nice to keep while they last, but for now you need to prioritize recovery
