Half the plant looks great, other half is black. Are the fully green ones still safe to consume and make drinks with?

SunnyThe healthy leaves are good. The yellow leaves looks like watering issues. Trim it to make it grow more branches with healthy leaves. You can dry the excess cuttings and save for later use.
