I have many Monstera plant that are flourishing, but for some reason, my mint Monstera has never done well. It’s currently down to just two leaves - the main leaf and then one that’s starting to yellow. I think I’ve had it for six months and I don’t believe I’ve ever had a new leaf come in on it. The roots look fine so it doesn’t look like it has root rot. I watered it the same way I do with my other ones. It is about a foot away from a grow light just like my other Monstera plants. It’s not root bound. Does anyone have any suggestions?

Id repot it. You say its not root bound but its in a nursery pot inside a pot. Sometimes that setup seems to cause issues with drainage. If you've never repotted it and that is the original nursery cup, it may have poor soil.

I would repot, rinse and thoroughly inspect roots, then replace all soil with a chunky soil mix. Then make sure your fertilizing.
