My monstera adansonii is growing like crazy and seems happy, but I’m noticing stalks that are becoming hollowed out. Is this plant slowly dying? Is there something I can do to prevent this from spreading?

Hollowed out or browning stalks is completely normal. If you look carefully, the stalks are hollowed out because from that section, a new stem/leaf bloomed - leaving some empty space once it grew and separated from the stalk.
