Hi! Wanting to dabble into moss poles and seeking any tips. Should I separate these at all into their own pots and if so what size pots? These are the products I purchased to start

I think it is a personal preference. I kept mine together and used 2 poles.

Strongly recommend those plastic pole structures and committing to it. Monsteras are climbing plants naturally, and will thrive. Example, my on the verge of death deliciosa saved from Target. It’s now happy happy, and naturally working its way up the pole. Would recommend assembling your pole with damp moss, then allow it to fully dry before transplanting. This will allow you to more easily tuck the aerial roots in to the pole and moss.

I tried one of the plastic poles with sphagnum moss, but now prefer the more solid wound grass type. The moss pole dries quickly, even if it has a drip cup on top. It also becomes a host for gnats. That made me switch to the wound grass type, which I soak before planting and mist as I water it. I’ve managed to grow moss on the grass- peeled it off a fallen tree and keep it misted. Just my experience for the past year.
