I repotted my orchids in January. All have put out new leaves and are now sprouting… Are they all air roots, or is the top one a new flower spike?

They look like healthy roots to me!
3 gillningarThey are all roots. You can cover and encourage them to grow into the bark, but if they stay outside the media and just shoot up and away from the pot, I’d probably try to moisten them from time to time. It looks like you had a few aerial roots in the second pic that dried out pretty quickly. Your environment may be a little more dry than this particular hybrid prefers.

The dried ones are really old. I used to have them in a bright bathroom, which I thought would be humid enough, but it was not.
