One of my cobweb houseleeks wasn't doing well so I cut part of it off to try propagating it. Because part of it was sick, is propagating it a lost cause? And can you only propagate the 'chicks', or can you use the leaves? Thanks!!

In general, plants can succeed as long as the propagated section is healthy even if the rest of the plant was near death. Both leaves and offshoots can be propagated. And it looks like yours wasn't sick, but doing a death-bloom. It's a species that blooms at the end of its life and then withers away, so totally normal but still a good reason to propagate
