If I have little plants like this with roots, do I need to keep the whole leaf attached, or can I trim some off?

Keep it attached until the leaf is “drained” of energy. It will look discoloured and shriveled

Leave it. It should eventually shrivel enough to fall off.

The new plant will get a lot of its nutrition from the old leaf if you take it off before the new plant won't live. Good luck

I planted them in their own pots.

They will usually still get a lot from the mama leaf, so I keep it on till it's sucked up

I've done this for several years now and I usually just place a small amount of soil in the tray and toss some leaves around and let them do ther thing. I will mist them about once a month in the winter and come spring I will set them in 2" pots till I decide what to do with them. They are so much fun.
