Growing three varieties of okra; noticed two cells have this white stringy stuff on them, which I assume to be fungi? Now I know this potting soil has beneficial fungi in it, so should I let them chill or take action?

Water less often and increase air circulation. Consider one or more of the following: mist with a diluted hydrogen peroxide solution, or 1 tsp baking soda in one quart of water. You can also gently scrape off the mold from the surface and/or give it a light sprinkling of cinnamon to inhibit the mold. If the problem is left unaddressed it could lead to damping off which would kill your crop of okra.

I second the hydrogen peroxide! I get this same mold every sprouting season. Only happens indoors -- sunlight prohibits the mold growth.

I went ahead and doused the two cells with cinnamon and am no longer putting back on the humidity dome. I am hoping that helps. Unfortunately, weather here will not return to being consistently > 60+ until next week so I don't think I can expose it to sunlight yet

Just give it as bright as you can indoors until the weather is right. I hope by saying doused you mean sprinkled! You don't want to overdo it and I would sprinkle it on all the cells not just the two with the mold. Mold is a sneaky spreader.
