Do you guys think I can cut split this in 3 as there are roots coming out of different nodes at this point? If the answer is yes, is it best to do it right before potting time or keep in water before potting?

    Yes, you can divide it. I would put the two pieces with the longest roots in soil, right now. I would let the piece with the shortest root stay in water a couple more weeks. Looks like the shortest root will be supporting two leaves afterwards. Leaving it in the water will give it a better chance of survival. I would, also, add a rooting hormone powder to the soil and SuperThrive plant vitamins to both the soil and water to give the plants a boost. I’ve had good results with both.
