Is it too late to start these on moss poles? If not how do I go about it? Also, why are my lower leaves curling?

You'll want to position some of the plant nodes, over the areas of available moss, and either pin them or tie them.

The "vines" are very long. Do I wrap them like I've done?

I have either wrapped them around the pole, or cut back the plant a bit. I don't have a pic of the plant i did for my friend, but I had wrapped the majority of the old growth in the base, so it looked bushy, and the started the vine up the pole. When wrapping, just keep in mind that if these poles don't expand(ie you can set a taller pole on top), it will be hard to deal with later.

I can’t get my monstera standleyana’s leaves to not curl either but from what I’ve read it’s a humidity thing.

It must be. I mist them every other day but I probably should dig out my humidifier.
