my elephant bush has recently started getting these long leafless tendrils stretching towards my new grow light.. any tips on preventing it from becoming even more leggy?

It looks like etoliation. It may need more light. Plants tend to do this and appear leggy when they're not getting a sufficient amount of sunlight. You can always get a growlight if you don't have a bright enough window :)

Hi, The leafless tendrils on your plant looks like inflorescens and indicates that your plant is actually a Peperomia and not a Portulacaria afra. ☺️

I’m glad to hear that you’ve found the correct plant ☺️ I also agree with killertofu that you should double check if your plant gets a proper amount of light.

Definitely looks like peperomia flowers to me! Maybe a smidge more light so she doesn’t get any leggier, but those long tendrils will eventually fall off and she’ll keep on growing :)
