Can anyone tell me why Phil Hartman has started sprouting white leaves? I suspect it may have to do with low light over the winter months. Will they get greener with increased lighting? Is this a sign of poor health or the magic of its nature? Thanks!

This is normal for varigated plants, to throw occasional full varigation leaves. If it's a light issue, its generally the other way around, high light can lead to higher varigation, low light leads to reverting to green or low/no varigation. Since they seemed interspersed i wouldn't worry too much, if like the top was only putting out white leaves and nodes, I'd recommend cutting it back to before that happened. Some leaves can darken up, but usually what chlorophyll is present, is what's present.

Thank you! I forgot to mention that there are lots of little baby leaves coming out which I am not used to seeing, usually it’s just big ones. I’m assuming that’s normal and probably a good sign to make it fuller?

This is pretty common for philodendron to have these smaller offsets at the base. They can even be removed sometimes to make a new plant if you want.
