Hi! Can y’all help me identify this plant? I’ve attached pictures over the past 5 months (since it’s changed a lot). It’s currently under a grow light (might be why it’s growing taller now, not sure.)

I think this is a Hens and Chicks, AKA sempervivum. I have the “cobweb” variety and mine looks just like yours. I also have the same problem with elongation even under a grow light.

Maybe because it isn’t actual sunlight?

Definitely a Hen/Chick. I plant mine outside here in Georgia. They can handle the cold but they need a ton of sun!

I’m in Chicago so it’s super cold and cloudy here, I doubt it’ll be able to survive outdoors :(

They can handle up to -10° in the ground! My neighbors in SLC, UT had them growing all over their yard and they would come back and thrive with little to no effort each year. The problem in Atlanta isn’t the cold, it’s the amount of rain! That’s usually what kills my in-ground hens/chicks.
