I’m new to gardening and want to learn the best ways to (organically) take care of my new additions. They’re currently germinating, and consist of chamomile, spearmint and sage.

Not an expert in those plants, but a YouTube channel I like to recommend is Epic Gardening, they have videos on chamomile and sage for sure, I’m not sure about spearmint. But they have a ton of good advice and are a great watch, I just binge their videos because they’re relaxing to me lol
