Though you don’t really grow up from seed, you just take a cutting and root it

Maybe try a citrus tree (personally I'd go with lemon or lime.) It'd need pruning to stay indoor-size, but it'd sprout easily and looks lovely as it grows. If you're up for a challenge, try espalier, or any native tree as a bonsai (natives may need to be outside in winter)
