Dahlias go dormant in fall and winter. They have a flowering season and then quit during the cold/dark months. You could literally just dig it up and stick it in the fridge until spring. Then plant it when the weather first starts to warm again and watch her do her thang!

I had no idea!

Yup, my mom used to plant them with her tulips and stuff because they’d come back every year.

I clip off growth and bring them into the garage for the winter. Then replant I'm spring. They aren't meant to keep leaves year round

Can I cut it down and leave it indoors until spring?

If you leave them buried i think I recall seeing they're prone to rotting. But given they're usually outdoors. I'm not sure if indoors would make a difference. You wouldn't be watering it, so it may be fine
