My Calathea Dottie has lots of new growth and looks great, but she has some brown leaves on the bottom, what’s up with that? Should i cut them?

Yes, I would. It’s completely normal in these plants for the old leaves to die at the bottom. Taking the dead or dying off will let the plant use that energy to push new growth.
