My purple-heart Spiderwort has a bunch of root that recently grew in! How long till I should repot her?!

I would wait until all of the roots are at least an inch long!

Also, wait until the main root has little roots growing out of it, which it looks like yours does

You could definitely wait to pot up but you can also pop that baby in a pot right now. Propagating spiderwort in water is absolutely fine and great experimental way of watching its roots grow then you can see what your working with. However keep in mind that this succulent, if you have the right growing conditions, does not necessarily need to be rooted. Here is one that started as 1 small cutting. As it grows I cut back at a hidden portion of foliage making sure there are a few nodes on the cutting. Dibble the soil with a chopstick and firm the cutting right into the soil (no prior rooting or rooting hormone). In a few weeks time there are tons of fibrous roots. Always keeping the soil slightly damp. My angle is to get the pot bushy and fill out before concentrating on the trailing. The caveat here is that I am growing it outdoors for its growing season before transitioning indoors.
