Does anyone know what is causing one of the leaves of my rubber plant to look like this?

Might be overwatering or if you’ve fertilized recently it could be that. Is the soil staying too wet for a long period of time? What fertilizer do you use?

In my experience, it’s usually because the soil isn’t draining well enough and the plant was sitting in water. You may want to check the roots to be sure it doesn’t have root rot! I would remove the leaf so it can focus its energy elsewhere and add something to the soil to make it chunkier (orchid bark and/or perlite)

If the soil isn’t overly wet, it’s probably over fertilized like Jill mentioned above!
