How do I help my Calathea Stella!? It seems dry by the roots/stems but the leafs are turning soggy and yellow..?

It’s probably one of two things or both. They need CONSISTENT humidity about 50% whatever you have needs to stay stable though.  
You also need to use filtered water, the lime that is in tap water will harm the leaves.
