Help! My baby olive tree died from under watering within its first few weeks at our home but is regenerating leaves at the bottom. Do I need to cut off the top parts and if so where do I cut?

It’s wonderful that it’s sprouting new growth! Your safest bet would be to prune just above the first node (the little bumps) above the leaves.
