if my monster doesn’t have any aerial roots, what’s the best way to encourage those growing?  
he has lots of light and is at least a couple years old

I think they just grow on their own. Usually for support or more nutrients.

is your monstera on a trellis or is it crawling across the pot? climbing monstera are more likely to produce those monstrous aerial roots we’re all looking for

i have her propped up with string, i’m waiting for my budget to allow me some moss poles!

Yes, water/mist the moss pole. That said, you can also just buy wood stakes (cheaper than a moss pole) to tie it to. Depending on the size of your plant, you may need something like a wood plank vs stake. I got tired of keeping the moss pole wet, and as my plant is over 5 ft tall I needed something more sturdy.
