How do I keep my lettuce safe from heat? I can’t transfer inside. ( Texas)

I have the same problem. It always bolts and becomes bitter

My grandma recommended to put tall plants (I.e. tomato, okra ). To give them some shade and a milk jug to cover on super hot days !
