So a couple weeks ago I put her under my stairs to dormant her but all that happened was her leaf’s dying. What am I doing wrong?

That is exactly what is supposed to happen for them to go dormant. Think about bulbs outside… their greenery dies off when it gets cold and doesn’t come back until the right conditions. You’re doing everything right.
